use the Spring lamb, I also used the lamb later in the year but too much fat. The best way to marinade is to use a plastic bag and massage the meat
powder the meat and lightly fry to seal the meat
slice 2 onions and put on the baking tray
Pre heat the oven to 180 degree(fan), slice a few garlics and add water to cover the meat, dark soy sauce or red wine, covered with foil for one hour. Take the meat out and turn the meat, pour sauce over the meat and back to the oven. Repeat this every half an hour for futher 2 hours.
Transfer the sauce to a small pan, bring to boil and simmer until thick enough for gravy.
